Prepare and Cut the Flatbread
Cook the frozen parotta on a dry, hot skillet according to package instructions until cooked through but still pliable. Stack them together, let them cool slightly, roll tightly into a cigar shape, and slice crosswise into 1/4-inch wide ribbons. Cut across the ribbons once or twice to yield small rectangles. Spread them on a baking sheet to air out for 10 minutes.
Pre-cutting the bread ensures even distribution throughout the stir-fry and maximizes surface area for curry absorption. Airing them out prevents them from turning gummy in the pan.
