Construct the Rof & Prepare the Fish
In a mortar and pestle or small food processor, pound or pulse the parsley, garlic, one Scotch bonnet, salt, and black pepper into a coarse, vibrant green paste. Using a sharp knife, carve 2 deep diagonal slits into the thickest parts of each side of the fish. Firmly pack the Rof paste deep into these pockets and inside the main cavity.
Stuffing the fish directly embeds the aromatics deep within the flesh, keeping it deeply flavorful and structurally sound during the intense cooking process.
