Prepare and Soak the Rice
Wash the rice in a large bowl changing the water at least 4-5 times, swirling gently until the water transitions from milky to perfectly clear. Drain thoroughly, then submerge the rice in clean water and let it soak.
Rinsing removes excess surface starches that cause rice to become gummy or clump up. Soaking ensures the grains hydrate evenly, leading to uniform cooking during steaming.
The rice grains will change from translucent to an opaque, matte white.
