The Alkaline Soak
Rinse the dried chickpeas thoroughly to remove field dust. Place them in a large deep bowl, cover with ample cold water (they will triple in volume), and stir in 1 tablespoon of baking soda. Leave to soak at room temperature for 12 to 14 hours.
The baking soda creates an alkaline environment that breaks down the pectin bonds in the chickpea skins, ensuring they soften deeply right to the core.
Plump, completely unwrinkled, bright yellow chickpeas that have doubled or tripled in size.
