Knead and Proof the Dough
In a large bowl, whisk together the flour, yeast, salt, and sugar. Pour in the lukewarm water, milk, and olive oil. Mix until a shaggy dough forms, then turn onto a lightly floured surface. Knead for 8–10 minutes until smooth, supple, and slightly tacky. Shape into a ball, place in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled in size.
A slow, warm proof develops the gluten structure needed to stretch the dough thinly without tearing, while the milk ensures a tender crumb.
The dough should spring back slowly when gently poked with a finger.
