Prep and De-starch the Potatoes
Cut the potatoes into even sticks, roughly 3/8-inch (1 cm) thick. Submerge them immediately into a large bowl of ice-cold water. Let them soak for at least 1 hour.
Soaking draws out excess surface sugars and starches. This prevents the fries from burning on the outside before the inside cooks through.
The water turning noticeably cloudy with released starch.
