Who we are

The Global Cuisine is an independent recipe publication operated by Eagle Eye Consultancy. It began with a simple frustration: most recipe sites treat world cuisine as a single category, flattening centuries of regional technique into interchangeable listicles. We wanted something different โ€” a site where every country's signature dishes are treated with the depth they deserve, and where discovering them feels like travel.

That's why our home page is a spinning 3D globe. Click any country and you land on its kitchen: the dishes locals actually cook, explained the way a patient home cook would explain them to a friend.

Meet Mr. Cuisine

Every recipe here is researched, written, and kitchen-tested by Mr. Cuisine โ€” the resident cook and editorial voice of The Global Cuisine. Mr. Cuisine is our in-house persona, in the tradition of publication kitchens: one consistent cook's voice standing behind every dish, so you always know who is talking to you and what standard the recipe was held to before it was published.

Behind the apron, the work is unglamorous and thorough: comparing regional versions of a dish, converting and re-checking every measurement, cooking the recipe as written, and rewriting any step that didn't behave in a real home kitchen. When a dish resisted โ€” a dough that tore, a stew that needed twenty minutes more than the books claimed โ€” the recipe was corrected before it reached you, and the hard-won details ended up in the "why it matters" and troubleshooting notes.

How we research our recipes

Every recipe on this site is researched from multiple sources before it is written โ€” regional cookbooks, food history references, and versions published by cooks from the dish's country of origin. We cross-check ingredient ratios, timings, and techniques across those sources, and where traditions disagree we say so openly in the recipe's authenticity notes.

Each recipe includes far more than a list of steps. You'll find the reasoning behind every technique ("why" notes on each step), visual cues to know when a stage is done, common mistakes and how to rescue them, ingredient substitutions that respect the dish, storage and reheating guidance, and estimated nutrition. Our goal is that you understand the dish, not just reproduce it.

What you'll find here

The library currently covers more than 150 dishes from over 90 countries โ€” from Turkish pide and Georgian khachapuri to Colombian bandeja paisa and Ethiopian doro wat. Alongside the recipes, the site offers a meal planner that matches dishes to the ingredients in your pantry, cook mode with step timers, metric and imperial conversions, ingredient scaling, and the ability to save recipes for offline cooking.

Our editorial standards

We do not scrape or republish other sites' recipes. Every recipe is written in-house, tested for internal consistency, and reviewed before publication. When we are less certain about a regional variation, we flag it rather than presenting a guess as fact. Corrections are welcome โ€” if you spot an error or a technique that doesn't match how the dish is made in its home country, please tell us and we'll review it.
